A GP calculator that works off the right number.
Most gross profit goes wrong in the same place: it gets worked off the till price. That flatters every dish on your menu by twelve to nineteen points, depending on the VAT rate. Use it here, or take the spreadsheet.
You price a burger at €16.50, the portion costs €4.85, and you tell yourself that's a 70% GP. Worked off the €16.50 it looks like 71%. Worked off the net price — €14.54 once 13.5% VAT comes out — it's 66.6%.
Four points doesn't sound like much until it's every dish, every service, all year.
